3 ingredient, flourless Peanut Butter Cookies

These are simple, fast, and easy to throw together. There are several recipes all over the internet. Some recipes vary from each other - some call for 1/2 cup sugar, 1 cup sugar, and some call for vanilla. This is what I have liked:

1 c peanut butter
1 c sugar
1 egg

Preheat oven to 325. Mix all ingredients together well. Make balls, put them on a greased sheet and flatten with a fork in both directions (or take all the batter and spread in a greased pan). Bake until the tops are cracked, I think about 10-15 minutes (just keep checking them). Take them out and let sit until almost all the way cooled (they are fragile when warm). Then take them off and put on a plate. Makes about 20. mmmm......melt in your mouth cookies!

on some I put a piece of fudge on top, but it melted weird.
I also rolled some of the dough into a log, took a slice, put a piece of fudge, then another slice of cookie. Those were good, the fudge melted good and make a peanut butter sandwich.
